Crispy chicken with sweet and spicy orange sauce

Ingredients
150 ml | Yóu Yóu Tea seed oil |

300g | Diced Chicken |
7 tbsp | Water |
6 tbsp | Flour |
5 slices | Ginger |
4 tbsp | Sugar |
4 tbsp | White Vinegar |
4 tbsp | Orange Juice |
4 pieces | Orange |
2 tsp | Minced orange peel |
2 tbsp | Soya Sauce |
2 tbsp | Custard Powder |
1 tbsp | Potato Starch |
1 tsp | Salt |
1 tbsp | Chilli Flakes |
1 clove | Garlic |
Instructions
- Sauce:
Mix 4 tablespoon of orange juice, 4 tablespoon of sugar, 4 tablespoon of white vinegar and 2 tablespoon of soy sauce - Batter:
Mix 6 tablespoon of flour, 1 table spoon of potato starch, 1/2 table spoon of soda powder, 1 teaspoon of salt and 3 tablespoon of water. Add in 2 tablespoon of Yóu Yóu Tea Seed Oil, mix till thicken. - Sprinkle 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper and 1 teaspoon of potato starch onto the diced chicken. Make sure all pieces are well coated
- In a wok, bring the Yóu Yóu Tea Seed Oil to a boil and turn the heat down.
- Dip the diced chicken into the batter
- Carefully place the batter-ed chicken into the boiled oil
- Deep fried the chicken for 4-5 minutes
- Scoop up the chicken, set and rest aside. Start preparing the sauce
- Use kitchen towel to wipe clean the wok of remaining
- Add in 2 tablespoons of Yóu Yóu Tea Seed Oil to the wok
- Add in ginger, garlic and 1 tea spoon of chilli flake
- Stir fried for 30 seconds
- Add in the sauce and bring it to a boil
- Mix 2 tablespoons of custard powder with 4 tablespoons of water in a bowl
- Add 3-4 tablespoons of custard mixture into the cooking sauce till it becomes thickened
- Add in minced orange peel
- Turn off the heat
- Put the chicken pieces back into the wok
- Mix it well with the sauce
- Ready to serve
- Notes: You can test the oil temperature by dropping a small piece of batter into the oil. You will see a lots of air bubble when the oil is ready
