Ma Po Tofu is one of the most popular classic Sichuan dishes. It has a spicy, hot, appetizing flavor, and is a perfect combination to eat with steamed rice.

1 ozYou You Tea Seed Oil
3 cloves
garlic, minced
1-2Serrano or Thai Chilies, chopped
6 ozcoarse ground pork
1 tbspblack bean sauce
2 tbspOyster Sauce
1 lbmedium or soft tofu cut into 1/2-inch cubes
1 cupchicken stock 
1 tbspsweet soy sauce
2 tbspchili crisp
1 tbspcornstarch slurry
3green onions, chopped


  • Heat wok and add oil. At the first whisp of white smoke, add the garlic and chilies and cook until fragrant, about 30 seconds. Stir in the ground pork, press flat and allow to brown for about 1 minute. Turn the patty over and press flat and repeat the browning. Break up the pork and allow to brown for about 2 minutes.  Stir in the black bean and oyster sauce and cook until mix through while constantly stirring.  
  • Add tofu, chicken stock, sweet soy sauce and chili crisp and stir well until the sauce comes to a simmer. Stir in slurry and cook until the sauce coats the back of the spoon. Stir in green onions and serve over cooked rice.
